Botz: How to Brew Israeli Field Coffee

Every Israeli soldier knows botz. The word means "mud," and it's the field coffee of the IDF: black grounds, hot water, a metal cup, zero equipment. No machine, no filter, no excuses.

The classic method

  1. Spoon finely-ground dark roast into a cup — about one heaped tablespoon per 200ml.
  2. Pour water just off the boil straight over the grounds.
  3. Stir once. Wait ninety seconds. The grounds sink — that's the mud.
  4. Drink carefully. Stop before the last sip unless you like chewing your coffee.
